Sunday Recipe: Rosemary lamb chops

Lamb is my favourite meat, I would eat it regularly if it wasnt so flippin' expensive! This recipe will serve 4.

You will need:
  • 8 lamp chops,
  • Salt & pepper,
  • 1 tablespoon of plain flour,
  • 1 teaspoon of redcurrant jelly,
  • 3 springs of rosemary,
  • 1 tablespoon of olive oil,
  • 200ml of lamb or vegetable stock
And this is what you do:
  1. Trim any excess fat from the chops, chop the rosemary and sprinkle half over the shops,
  2. Heat the oil in a frying pan, cook the chops (in batches if necessary) for 5-6 minutes each side until they are cooked. The meat should be cooked but not pink,
  3. Blend the flour int he pan juices and cook for thirty seconds, gradually blend in the stock and the jelly,
  4. Bring to the boil and stir frequently, boil until the sauce thickens,
  5. Pour the sauce over the chops and sprinkle over the remaining rosemary.
Option: Add 150ml red wine to the stock

Sunday Recipe: Raspberry Buns

I used to love making these buns in cookery class in primary school:

You Need:
  • 4oz self raising flour,
  • 2oz butter,
  • 1 egg,
  • jam
  • salt, 2oz castor sugar
  • 1 tablespoon milk
And this is what you do:
  1. Preheat the oven to 450F / 230C / Gas8
  2. Sift the flour and salt into a bowl,
  3. Cut the butter into small pieces, add to the flour and rub into the flour,
  4. Add the sugar and stir,
  5. Grease a baking sheet and spoon on the mixture into small heaps,
  6. Using the back of a spoon make a small hole in the top of each heap and add the jam, pinch the top closed,
  7. Bake for 15-20mins until they are golden

Friday Finds!

Peppermint is one of my all time favourite smells, I find it can
wake me up in the morning shower, can help with a headache if I chew some gum and is refreshing to burn in a candle burner. So for this Friday Find I just had to pick this amazing looking peppermint body lotion from Essensu.

Friday Finds!

What do we have today? I've been starting to think about gifts I can get my youngest niece for her birthday next month. Her hair is a hit haywire at times and some funky hair clips might be one idea.

Keeping with my favourite colour of purple, these purple swirly hair clips from Smiss00 are fab!

Resolutions one month on

Happy February 1st! How has your January been? It can be such a long month, many of us get paid before Christmas and are desperate for the pay packet to arrive, its dreary weather and if you're like me it's dark when you leave home in the morning and dark when you get home at night.

January is also a time people make their resolutions or goals for the year. Did you set any? Many it is to lose weight, join the gym etc. I often used to set myself five or six goals but this year just 2 that are important to me:

1) Sleep for more than 4 hours a night,
2) Consume less

So, one month in how am I doing? Well im getting more than four hours sleep a night, on a week night I average 5.5 which is a vast improvement but still not quite meeting my target of 6.5 - i'll get there though.

As for consuming less, I made one purchase from my favourite bath and body seller Pegasus Soaps but no more toiletries other than that, I have decluttered quite a bit of paperwork and am trying to bin/recycle/donate at least one thing a day (today it was 3 empty plastic bottles from shampoo etc).

The craft supplies is a little harder, what i allowed myself to do was buy anything i needed before yesterday Jan 31st as I have quite a few new product lines up my sleeve. But from now on, I only buy something if I run out and absolutely need it - adhesive for example. Hopefully that will last for a couple of months anyway!
