Sunday Recipe: Hasselback Potatoes

I love roast potatoes, this is just a different way of doing them and serves 4.

You will need:
  • 8 peeled potatoes,
  • 50g / 2oz melted butter,
  • 1 tablespoon dried bread crumbs,
  • Salt
And this is what you do:
  1. Preheat the oven to Gas 7 / 210C
  2. Push a skewer lenghtways through the lower part of the potatoes,
  3. Slice the potatoes as far down as the skewer so they sort of look like a hedgehog,
  4. Remove the skewers and put the potatoes into a lightly greased oven proof dish,
  5. Brush with melted butter and sprinkle with salt,
  6. Roast for 40-45 mins and sprinkle with breadcrumbs 10mins before the end
