Sunday Recipe: Potato Supper

This is an easy to turn to recipe that is certainly filling!

You will need:
  • 5 waxy potatoes per person,
  • Butter,
  • Chicken stock,
  • olive oil,
  • 2 thin bacon rashers per person
  • 1 safe leaf per person
And this is what you do:
  1. Set the oven to 180C / Gas4
  2. Peel the potatoes or wash them really well,
  3. Slick to the thickness of a pound coin / 8th inch,
  4. Warm enough oil to cover the bottom of a pan,
  5. Fry the potatoes just long enough to colour them lightly on each side, lift them out onto kitchen paper,
  6. Generously butter a baking dish or shallow roasting tin,
  7. Cut the bacon into pieces about the size of a stamp,
  8. Layer the potatoes in the buttered dish scattering with bacon, sage and ground salt & pepper as you layer,
  9. Dot the surface with little blobs of butter and pour over enough stock to cover,
  10. Back in the oven for about an hour until the potatoes are soft to crush
