You will need:
- 5 waxy potatoes per person,
- Butter,
- Chicken stock,
- olive oil,
- 2 thin bacon rashers per person
- 1 safe leaf per person
- Set the oven to 180C / Gas4
- Peel the potatoes or wash them really well,
- Slick to the thickness of a pound coin / 8th inch,
- Warm enough oil to cover the bottom of a pan,
- Fry the potatoes just long enough to colour them lightly on each side, lift them out onto kitchen paper,
- Generously butter a baking dish or shallow roasting tin,
- Cut the bacon into pieces about the size of a stamp,
- Layer the potatoes in the buttered dish scattering with bacon, sage and ground salt & pepper as you layer,
- Dot the surface with little blobs of butter and pour over enough stock to cover,
- Back in the oven for about an hour until the potatoes are soft to crush
